Mashed potato masala curry

 



Ingredients

  • 1 large onion
  • 3 tomatoes
  • 2 green chilis
  • 4 curry leaves (optional)
  • 1/4 teaspoon asafoetida (optional)
  • 2 potatoes
  • 1/2 cup diced carrot
  • 1/2 cup peas
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 1/4 cup cut cilantro

Recipe

  1. cut the potato into big chunks and cook them in water until they are ready to be mashed. Alternately you can also pressure cook them. Set them aside to cool down.
  2. Heat a pan. Add the cut green chilis & curry leaves. Fry for less than a minute.
  3. Add the asafoetida if you choose to use it. This gives a pungent smell. Some may not like it.
  4. Add the diced onion and water along with it. Cook the onion in water.
  5. Add the tomatoes and cook them all for 10 minutes.
  6. Peel the skin of the potatoes and mash them. Add them to the cooked dish.
  7. Add the diced carrots and peas. Add the turmeric powder, water and cook for another 10 minutes.
  8. When all the vegetables are cooked, switch off the flame.
  9. Add lemon juice.
  10. Garnish with cilantro.
  11. Serve hot with rice, tortilla or roti.
