Stuffed Anaheim chili peppers



 

Ingredients

  • 3 plump Anaheim chili peppers 
  • 1/2 large onion
  • 3 garlic cloves
  • 1 green chili
  • 10 cherry tomatoes
  • 1 cup corn, beans, peas and carrot mixture. Frozen or fresh cut.

Recipe

  1. Cut the Anaheim chili peppers length wise. Scrape the seeds and flesh with a spoon.
  2. Heat a pan and add  minced onions, green chili and garlic. cook in water.
  3. Add small cut cherry tomatoes and cook them.
  4. Once the mix is cooked add the frozen veggies to the pan.
  5. I usually wash and thaw the frozen mix before adding. If using fresh, cut them into small pieces.
  6. Cook them all together.
  7. Preheat oven to 375 degree F.
  8. Stuff the cooked veggie filling in the Anaheim peppers.
  9. Place them face up on a baking tray.
  10. Bake at 375 for 30 minutes.
  11. Serve hot with rice.
